Strawberry Pie


Gluten Free Veggie Pies

This gluten free strawberry pie feels like decadence on a plate. It is rich and fruity, fresh and comforting. You will honestly want to go back for a larger slice.


Serves 8


INGREDIENTS:


Pastry

  • 200g gluten free baking flour ( I love to use Bob's Red Mill flour)

  • 100g butter or ghee (room temperature)

  • 1 egg (room temperature)

  • 2 tblspns icing sugar





Strawberry Filling

  • 250g strawberries, remove the green, and slice

  • 1 apple, peeled a finely diced

  • 2 tblspns honey or rice malt syrup

  • 1 tspn tapioca starch

  • 1/4 tspn cinnamon

  • pinch of salt



METHOD:


Pastry

Rolling GF pastry is tricky but not impossible

Preheat oven to 180°C fan forced.


Grease a pie or oven safe dish and set aside.


In a large bowl, mix the flour and butter until it has the consistency of course sand.


Add the egg and icing sugar and continue to mix until well combined.


Form the dough into a ball and with the aid of some baking paper, roll out a circle large enough to cover the base and sides of your dish.


Carefully lift the dough and lay it into the dish, pressing it to evenly cover the base and sides.


Cut any excess off and reroll this for the top of your pie.


Bake in the preheated (180°C) oven for 20 minutes until golden brown.




Pie filling


While the pastry is baking, cook the apples and strawberries in a saucepan until tender. Add the honey (or rice malt syrup), cinnamon and salt. Adjust sweetness according to your preference by adding more or less honey or rice malt syrup.


Bring to a boil, then reduce the heat to a simmer for about 10 minutes.


Mix the tapioca starch with a tablespoon of cold water and add it to the filling. Cook for an additional five minutes at medium-high heat until the strawberry filling has thickened.


Set the filling aside to cool.



Assembly


The filling should be cooled before placing it in the pie crust to avoid a soggy crust. Once the pie crust and the filling are cooled, place the strawberry filling into the pie crust.


Place any strips of pastry over the filling in a latice pattern or however you prefer.


Bake the pie for an additional 10 minutes.



Allow the pie to cool a bit before slicing, then savor the deliciousness of your homemade strawberry pie!
