Vegan, Gluten-Free Cinnamon Scrolls

These scrolls are incredibly easy to make and so delicious, you'll want to make more straight away.


They're crispy and sweet, and the best part is (nearly) everyone can eat them because they're gluten-free and vegan without compromising on yumminess.


Make these as a treat for someone you love or just for yourself!

INGREDIENTS:


Dough

  • 240g Gluten Free Plain Flour

  • 100g Buckwheat Flour

  • 90g vegan butter

  • 150 ml dairy-free milk of choice

  • 2 tspns baking powder


Filling

  • 60 g softened nuttelex

  • 80 g brown sugar

  • 1 tspn cinnamon or you may even like to add a drop or two of cinnamon essential oil

Icing

  • 150g icing sugar

  • 1 tblspn boiling water


METHOD:


Dough

Preheat oven to 210C fanforced. Line a baking tray with a sheet of baking paper, set aside.


Place flours and butter into food processor and mix until ingredients come together and mixture resembles breabcrumbs.


While still mixing, gradually add the milk, and combine until a dough is formed. It needs to be pliable but not sticky (because it's gluten free it's going to be stickier than a regular flour dough, but don't be tempted to add more flour. As long as you can roll it, and still gently pull it away from the surface you rolled on, it's perfect).


Tip dough onto a pastry mat or baking paper and roll into a 25 x 40cm rectangle and to about 5mm thick.


Filling


Place all the filling ingredients into a food processor a mix for about 30 seconds or until it's nice and creamy.


Spread this mixture over the entire dough rectangle.


Slowly and carefully roll the dough from the long edge and use a sharp or serrated knife to cut dough into 3cm pieces.


Place dough pieces, cut side up, on prepared baking tray and bake in the oven for 15 minutes, or until golden brown.

Remove from the oven and cool while you prepare the icing.


Icing

Stir the icing sugar and water together until you've reached a smooth consistency, add more water if you want a runny mixture to pour over the rolls, or keep it nice and thick if you prefer a thicker icing.


Once the rolls are completely cool, drizzle the icing over the top.
