🧂 Ingredients
For the Tofu Gnocchi:
1 block firm tofu (pressed)
½ cup all-purpose flour , I used Gluten Free Flour.
Salt to taste
Stir-Fry Veggies:
1 cup broccoli florets to align the Heart Chakra
½ cup carrots (julienned) to balance the Sacral Chakra
1 small red onion (sliced) great great for the Crown Chakra
½ cup bean sprouts great for the Root Chakra
¼ cup yellow capsicum great for the Solar Plexus Chakra
1 tbsp garlic (minced) great for the Solar Plexus Chakra
Sauce:
2 tbsp tamari sauce
1 tbsp coconut aminos
1 tsp sesame oil
1 tsp maple syrup
1 tsp apple cider vinegar
1 tsp cornstarch (mixed in 2 tbsp water)
Optional: chili flakes or sriracha for heat
🍳 Step-by-Step Cooking Instructions
Step 1: Prepare Tofu Gnocchi
1. Press Tofu: Drain tofu and press for 10-15 mins to remove moisture.
2. Blend/Smash: Mash tofu in a bowl or food processor until smooth.
3. Add Flour & Salt: Mix with flour until dough forms (not sticky).
4. Shape: Roll into long ropes and cut into gnocchi pieces (about 1 inch).
5. Boil: Drop into boiling water. When they float, remove and set aside.
6. Pan-fry (optional): For golden texture, lightly pan-fry in oil until golden brown. Set aside.
Step 2: Stir-Fry Vegetables
1. Heat 1 tbsp oil in a wok or large pan.
2. Add garlic and red onions - sauté 1 minute.
3. Add carrots, broccoli, and capsicum - stir-fry 2-3 minutes.
4. Add bean sprouts last for 1 minute.
Step 3: Combine Everything
1. Return gnocchi to the pan.
2. Pour in the sauce (soy, hoisin, sesame, cornstarch mix).
3. Toss everything well and stir-fry until the sauce thickens and coats all ingredients (1-2 mins).
Step 4: Serve
Serve hot in a bowl.
Garnish with sesame seeds or spring onions if desired.

Add flour gradually - moisture varies by tofu.
Use high heat for stir-fry - veggies stay crisp.
Double batch gnocchi and freeze extras! … we even made some mushroom empanadas with the leftovers though that were to die for!
