Cornbread Muffins for the Solar Plexus Chakra

This is my personal take on cornbread. Golden, nourishing, and infused with both ancient wisdom and kitchen witchery. Corn has always carried the energy of abundance, and in this recipe, it’s elevated with ghee, honey, and intention. These muffins are more than food, they’re a spell of comfort, nourishment, and seasonal magic for your Solar Plexus Chakra.

Cornbread carries a special resonance with Lughnasadh (Lammas), the first harvest festival on the Pagan Wheel of the Year (August 1 in the Northern Hemisphere, February 1 in the Southern Hemisphere) .
Corn, as a Lammas food, symbolises abundance, gratitude, and the turning of the seasons. Sharing cornbread at this time is a way to honour the Earth’s generosity while also celebrating the harvest within yourself.
Dry Ingredients
⅓ cup almond flour
⅔ cup gluten-free flour blend
¾ cup yellow medium-grind cornmeal (polenta)
1 tbsp baking powder
½ cup agave sugar (I use a little extra for more sweetness)
¼ tsp salt
Wet Ingredients
1 cup organic corn kernels (from 2 cobs), boiled, de-cobbed, and partially blended
½ cup / 125g ghee (I like to mix half ghee and half oil for balance)
2 eggs, lightly whisked
¾ cup cashew milk
Method
Place a 26cm / 10" cast-iron skillet in the oven and preheat to 220°C / 425°F while you prepare the batter.
In one bowl, whisk together all the dry ingredients.
In another bowl, mix the wet ingredients until combined.
Pour the wet into the dry and stir until just mixed — don’t overdo it.
Carefully remove the hot skillet from the oven. Add 1 tbsp butter or ghee, swirling (or brushing) it around to coat the base and halfway up the sides.
Pour in the batter and smooth the surface.
Reduce the oven to 190°C / 375°F and bake for 15–20 minutes, until the top is light golden and a skewer comes out clean. The top should spring back when lightly pressed.
Let cool for 15 minutes before serving.
Best enjoyed warm with extra ghee and a drizzle of honey, the perfect way to take this humble cornbread over the top!
