Grounding Caribbean Black Beans

Ingredients:
Cooking oil
1 onion, diced
2 celery stalks, grated
2 carrots, grated
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1/2 tbsp coconut sugar or maple syrup
1/2 tbsp grated ginger
2 cloves garlic, minced
3 cups black beans (soaked overnight, with 1/2 tsp bicarb soda for soaking)
6 cups of water or chicken stock
2 tsp ground cumin
2 tsp ground coriander
1 tsp kosher salt (add at the end of cooking)
1/2 tsp ground black pepper
2 tbsp finely minced fresh cilantro
Instructions:
Cook the Vegetables: Heat a skillet over medium heat and add a small amount of cooking oil. Sauté the onion for 2-3 minutes until it begins to soften.
Add Spices and Vegetables: Stir in the cumin and coriander, cooking for 1-2 minutes to toast the spices. Add the celery, carrots, and peppers, and sauté for another 5-7 minutes until softened.
Add Aromatics: Stir in the grated ginger and minced garlic. Cook for another 1-2 minutes until fragrant.
Combine with Beans: Discard the soaking liquid. Add the black beans and 6 cups of water to the skillet. Stir in the coconut sugar (or maple syrup).
Simmer: Cover the skillet and let everything cook for about 35 minutes. Uncover, taste, and adjust seasonings with salt and pepper. Cook uncovered for an additional 5 minutes, allowing the liquid to reduce and thicken.
Finish and Serve: Remove the skillet from heat and stir in the fresh cilantro. Serve warm as a side dish, filling, or over rice and avocado .
