Coriander, Lime & Cashew Pesto
This pesto is so flavoursome & versatile you'll want to make it again and again. If you like coriander that is. Those who don't, will never come over to this side of the fence because it's not a simple dislike, but a genetic aversion to the leafy cilantro. But that's okay, that means there's more for us.
It has a winning combination; fresh coriander, lime to make it pop, and creamy cashews pulling all the yumminess together.
This dish is fresh, gluten free, and so very scrumptious, give it a try.
Ingredients:
1 garlic clove
large bunch of coriander
1/4 cup (60g) raw cashews
2 tblspns (30g) grated parmesan cheese
juice & zest of 1 lime
1 tblspn olive oil
Optional - 1 or 2 drops of Lime Essential Oil for an extra lime boost
Optional - 1 green chilli for added zing
Method:
Place the garlic in a food processor and chop ( Thermomix - speed 7, 5 seconds)
Add the remaining ingredients and process ingredients together until it's your desired consistency. (Thermomix - pulse x 2 or until it's reached the consistency you like).
You can enjoy this as a dip, stirred through a bowl of pasta, dolloped on top of a Thai curry, or spread over some fish and grilled in the oven.
